Our Infinite Barrel Project is a constantly evolving whiskey that is different with each bottling date. After we remove a portion of the Infinite barrel to bottle, we repace it with mature whiskeys. The result is an ever changing and increasingly complex whiskey. Our February 12, 2018 bottling contains Tennessee Whiskey and Rye, Indiana Rye, Indiana Whiskey finished in Oloroso sherry butts, 100% Polish Malted Rye finished in Curacao barrels, Scotch Whisky, and Irish Whiskey.
Appearance: The bronze core dissolves into wisps of gold leaf cascading into brilliantly polished silver tat is marbled with honey bubbles.
Nose: Spring strawberries and raw clover honey followed by bursts of smoked fruit and unsweetened cocoa, coated with marzipan and walnuts.
Palate: Thick slabs of cast iron seared gingerbread painted with a molten wash of frizzled shallot brown butter.
Finish: Crunchy pork skin, sumptuous, candied yam pudding and deeply toasted, corn hushpuppies dusted with confectioners sugar, lead into tiny bursts of sea salt, orange zest and sizzling hot chili peppers.
Bottled at 119.3 Pf, crafted and bottled in Kentucky, using Tennesse Whiskey and Rye, with the Indiana wiskey finished in Oloroso sherry butts. The Rye is Indiana based, blended with a Polish Malted Rye that is finished in Curacao barrels. It also includes Scotch whiskey and Irish whiskey.
